Japanese Egg Salad Sandwich with Umami Twist
Creamy, savory, and impossibly moreish. Your new go-to sandwich.
Ingredients (makes 2 sandwiches):
- 
4 slices soft white or milk bread 
- 
3 eggs 
- 
½ small cucumber, thinly sliced 
- 
1 sheet nori, cut into strips (optional) 
- 
Salt and pepper to taste 
- 
Butter (optional, for bread) 
- 
2–4 tbsp Japanese-style mayo 
Optional twist: Use Yuzu Mayo instead for a hint of zest!

Instructions
- 
Boil eggs: Simmer for 9 minutes, cool, peel, and mash. 
- 
Make egg salad: Mix eggs with mayo, salt & pepper. 
- 
Layer up: Lightly butter bread, add cucumber, then pile on egg salad. 
- 
Add nori: For umami crunch, top with nori strips. 
- 
Assemble and serve: Top with remaining bread, trim crusts if you like, and slice in half.
