Japanese Egg Salad Sandwich with Umami Twist

Creamy, savory, and impossibly moreish. Your new go-to sandwich.

Ingredients (makes 2 sandwiches):

  • 4 slices soft white or milk bread

  • 3 eggs

  • ½ small cucumber, thinly sliced

  • 1 sheet nori, cut into strips (optional)

  • Salt and pepper to taste

  • Butter (optional, for bread)

  • 2–4 tbsp Japanese-style mayo

Optional twist: Use Yuzu Mayo instead for a hint of zest!

Instructions

  1. Boil eggs: Simmer for 9 minutes, cool, peel, and mash.

  2. Make egg salad: Mix eggs with mayo, salt & pepper.

  3. Layer up: Lightly butter bread, add cucumber, then pile on egg salad.

  4. Add nori: For umami crunch, top with nori strips.

  5. Assemble and serve: Top with remaining bread, trim crusts if you like, and slice in half.
