Tofu Poke Bowl with Uma Mayo
A fresh, umami-packed bowl starring crispy tofu and creamy UmaMayo.
Ingredients (serves 2):
- 
1 cup cooked sushi or brown rice 
- 
200g firm tofu, pressed and cubed 
- 
1 tbsp soy sauce 
- 
1 tsp sesame oil 
- 
½ avocado, sliced 
- 
½ cup edamame, cooked and shelled 
- 
1 small cucumber, thinly sliced 
- 
1 small carrot, julienned 
- 
¼ cup pickled radish or daikon (optional) 
- 
½ tsp wasabi paste (optional) 
- 
1 tbsp toasted sesame seeds 
- 
Fresh coriander or spring onion, for garnish 
- 
4 tbsp UmaMayo 
Optional extras: Mango chunks, red cabbage, kimchi, crispy shallots
Instructions
- 
Crisp the tofu: Toss tofu in soy sauce and sesame oil. Pan-fry on medium heat until golden and crispy (5–7 min). 
- 
Build the bowl: Layer rice, then arrange toppings in colorful sections. Add tofu, veggies, avocado, and pickles. 
- 
Finish with flair: Drizzle generously with UmaMayo, sprinkle sesame seeds, and garnish. 
- 
Serve: Mix just before eating for a hit of umami in every bite.
