Yuzu Prawns Lettuce Cups
Ingredients (Serves 2)

4 large lettuce leaves (cos or butter lettuce works best)

6 cooked prawns, chopped

1 tbsp Umei Yuzu Mayo

1 tsp chopped coriander

Fresh chilli slices (optional, for heat)
Instructions

Mix the filling:
In a small bowl, combine the chopped prawns with Umei Yuzu Mayo and coriander. Toss until everything is evenly coated. -
Assemble the cups:
Spoon the prawn mixture into each lettuce leaf, creating neat little cups. -
Garnish & serve:
Top with fresh chilli slices if you like a little spice boost. Serve immediately while crisp and cold.
Serving Tips
- This recipe also works well to make a roll by replacing lettuce with brioche buns
- Add avocado slices for a creamier bite.
- Sprinkle toasted sesame seeds for extra nuttiness.
- Great as a light lunch, canapé, or party starter.
