Crispy Smashed Potato Gems with Tuna & Salmon Sashimi

Ingredients

Tuna sashimi mix

  • 100g sashimi-grade tuna, chopped
  • 1 tbsp Umei Yuzu Mayo
  • 1 tbsp crispy chilli oil

Salmon sashimi mix

  • 100g sashimi-grade salmon, chopped
  • 1 tsp chopped shallot
  • 1 tsp chopped spring onion
  • 1 tbsp yuzu ponzu

Other components

  • 20 potato gems (tater tots)
  • ½ cucumber, sliced
  • ½ avocado, cubed
  • 1 pack seaweed snacks
  • Ikura or crispy fried shallots (optional, for extra umami + crunch)

Method

1. Prepare the sashimi

  • In a bowl, mix the tuna with Umei Yuzu Mayo and crispy chilli oil. Set aside.
  • In another bowl, mix the salmon with shallot, spring onion, and yuzu ponzu. Set aside.

2. Make smashed potato gems

  • Cook potato gems in an air fryer according to packet instructions
  • Halfway through cooking, remove and gently smash each gem using the bottom of a cup until flattened
  • Return to the air fryer and cook until golden and extra crispy

3. Assemble potato bites

  • Spoon tuna or salmon mixture onto each crispy potato
  • Top with avocado, ikura, or crispy fried shallots

4. Make sashimi seaweed rolls

  • Place sashimi and cucumber onto a seaweed snack
  • Roll like a sushi “cigar” and serve immediately

To serve

Serve immediately while the potatoes are hot and crispy. Arrange everything on a platter for a mix-and-match, share-style experience.
