Chicken Vermicelli Noodle Bowl

This chicken vermicelli noodle bowl is perfect for a weeknight dinner, cook the chicken on your bbq to get an extra punch of umami. I’m all about my toppings, I love using @umeifoods gochugaru mayo, spring onions, fried shallots and coriander.

Ingredients (Serves 4)

Chicken Marinade
1kg chicken thigh, boneless, skinless
1 1⁄2 tbsp light soy sauce
1 tbsp mirin
2 tsp dark soy sauce
2 tsp sake
2 garlic cloves, grated

Noodle Dressing
2 tbsp light soy sauce
1.5 tbsp rice wine vinegar
1 tbsp sesame oil
1 tsp caster sugar
1 chilli, diced, to your taste

Salad Ingredients
2 cucumbers, ribboned
1 cup spinach leaves, chopped
1 capsicum, sliced
1⁄2 cup mint leaves, chopped
1⁄2 cup chopped coriander
1/2 cup spring onions, chopped
250 g rice vermicelli noodles, dried to be rehydrated

Instructions
Step 1
Marinate your chicken using the ingredients and let it marinate for at least 20 minutes before cooking on a grill or pan fry.

Step 2
Prepare your vegetables for the salad.

Step 3
Cook your vermicelli noodles per the instructions on the packet, rinse with cold water to prevent sticking.

Step 4
Make your noodle dressing.

Step 5
Add your noodles into a bowl, add the vegetables, grilled chicken and pour over the noodle dressing.

Step 6
Top your dish with gochugaru mayo, spring onions, coriander and fried
