Addictive Yuzu Mayo Eggplant Katsu Sandwich

A crispy, plant-based katsu with a creamy, zingy yuzu mayo spread—this sandwich is

Ingredients:

  • 2 slices soft white bread
  • 2 slices breaded and fried eggplant
  • 2 tbsp Umei Yuzu Mayo
  • Shredded cabbage
  • Pinch of salt
