The name Uma Mayo is short for Umami Mayo, reflecting the rich umami flavour that seaweed brings. Umami is a Japanese word meaning savouriness, created by glutamate that occurs naturally in foods such as seaweed.
What seaweed is used in the Uma Mayo?
We use organic seaweed powder (sea lettuce) in Uma Mayo. Sea lettuce is dried and powdered before mixing it into the mayo.
